Preheat oven to 400F. Line large baking sheet with aluminum foil and lightly spray the foil with cooking spray.
Ingredients:
- 1 ½ pounds haddock fillets
- 15 to 20 large raw shrimp (get the ones with tails removed and deveined)
- Juice of ½ large lemon
- 15 Ritz crackers, melted+
- Salt and pepper to taste
- Fresh parsley for garnish
Method:
Place haddock fillets on the baking sheet skin side down (if the skin isn’t already removed).
Drizzle lemon juice over the haddock and season with salt and pepper to taste. Set aside.
In a medium bowl, crush Ritz crackers to form crumbs. Pour the melted butter over the crumbs and toss to mix.
Next, top the haddock evenly with the shrimp pieces, then sprinkle the cracker/butter mixture over them.
Bake in the preheated oven on the centre rack for 15 to 20 minutes or until haddock is cooked through and flaky. The crumb topping should be slightly browned.
Remove from oven and garnish with chopped fresh parsley.
