Preheat oven to 400F. Use 10” pie plate. Total time: +/- 50 minutes.
Ingredients:
- 1 pound ground beef or sausage
- 1 medium onion, chopped (1/2 cup) or ½ teaspoon onion powder
- 1 envelope taco seasoning mix
- 1 can chopped green chilies, drained
- Cornbread:
- 1 cup flour
- 1 cup yellow cornmeal
- 1/3 cup sugar
- 1 teaspoon salt
- 3 ½ teaspoons baking powder
- 1/3 cup melted butter
- 1 large egg
- 1 cup milk
- 1 cup grated cheddar cheese
Method:
Grease bottom and side of the pie plate.
Cook beef and onion in 10” skillet over medium heat, stirring occasionally, until beef is brown. Drain.
Stir in seasoning and spread in pie plate. Sprinkle with chilies.
In a medium bowl, combine flour, cornmeal, sugar, baking powder and salt. Combine egg, milk and butter; stir into the dry ingredients, just until moistened.
Pour over the filling and bake for 20 to 25 minutes. Take pie out of oven and sprinkle with cheese.
Return to oven for another 6 to 8 minutes, until a toothpick inserted into the centre of the cake comes out clean.
